Cucumber Caprese Salad

A refreshing Cucumber Caprese Salad perfect for summer, packed with crisp cucumbers, juicy cherry tomatoes, creamy mozzarella, and aromatic basil.

Ingredients

  • 2 large cucumbers
  • 1 cup cherry tomatoes, halved
  • 8 oz fresh mozzarella, diced
  • 1/4 cup fresh basil leaves, torn
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Wash cucumbers and tomatoes, slice cucumbers and scoop out seeds, then cut them into preferred shapes.
  2. Halve the cherry tomatoes to release their juices.
  3. Dice the fresh mozzarella into bite-sized cubes.
  4. Tear the basil leaves to enhance flavor.
  5. Combine cucumbers, tomatoes, mozzarella, and basil in a large mixing bowl.
  6. Prepare the dressing by whisking together olive oil, balsamic vinegar, salt, and pepper.
  7. Toss the salad gently with the dressing and serve immediately.

Notes

To keep cucumbers extra crisp, soak slices in ice water for about 10 minutes before assembly. This salad can be customized with avocados, grilled ingredients, or a pesto twist!
