Creamy Ditalini Pasta

A comforting creamy ditalini pasta dish that’s perfect for any occasion.

  • 1 lb ditalini pasta
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 cup vegetable broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the ditalini pasta and cook according to package instructions until al dente, usually around 8-10 minutes. Reserve about a cup of pasta water, then drain and set aside.
  2. Sauté the Aromatics: In a large skillet over medium heat, add olive oil. Add chopped onion and cook for about 3-4 minutes until translucent. Add minced garlic and cook for another minute.
  3. Add the Tomatoes and Broth: Pour in diced tomatoes along with their juices and stir well. Then add vegetable broth, turning the heat up slightly. Bring to a gentle simmer for about 5 minutes.
  4. Incorporate the Cream: Slowly pour in heavy cream and stir to combine. Let it simmer gently for about 2-3 minutes, then stir in Italian seasoning, salt, and pepper.
  5. Combine with Pasta: Add the cooked ditalini pasta to the skillet, tossing gently until coated in the sauce. Heat through for an additional minute or two.
  6. Serve and Enjoy: Remove from heat and serve topped with grated Parmesan cheese.

Notes

Make sure to salt the pasta water and use reserved pasta water to adjust sauce consistency if needed.
