Slow Cooker Cowboy Casserole

A hearty and comforting casserole made in a slow cooker, perfect for busy days and packed with protein.

  • 1 pound lean ground beef
  • 1 cup finely diced sweet yellow onions
  • 1 tablespoon minced garlic
  • 1 (16-ounce) can dark red kidney beans, undrained
  • 1 (14.5-ounce) can petite diced tomatoes with juice
  • 1 (10-ounce) can diced tomatoes with fire-roasted hatch chilies, with juice
  • 1 cup frozen corn
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • ¼ teaspoon chipotle powder
  • pounds Yukon Gold potatoes, sliced about inch thick
  • 1¼ cups Colby and Monterey Jack cheese, freshly shredded

Instructions

  1. Brown the beef: In a skillet over medium heat, brown the ground beef, drain any excess fat.
  2. Sauté the aromatics: In the same skillet, sauté the onions and garlic for about 2-3 minutes until soft and fragrant.
  3. Combine ingredients in the slow cooker: Transfer beef and onion-garlic mixture to the slow cooker and add beans, tomatoes, corn, salt, pepper, and chipotle powder. Stir well.
  4. Layer the potatoes: Layer the sliced potatoes on top, slightly overlapping.
  5. Top with cheese: Sprinkle the shredded cheese over the top.
  6. Cook it low and slow: Cover and cook on low for 6-8 hours or high for about 4 hours.
  7. Serve it up: Stir well before serving and enjoy!

Notes

For serving, garnish with fresh cilantro or green onions. A dollop of sour cream or jalapeños adds a fun kick.
