Summer Berry Jello Lasagna

A playful no-bake dessert featuring creamy layers of whipped goodness and vibrant Jello, perfect for summer gatherings.

  • 1 cup boiling water
  • 1 package (3 oz) strawberry flavored Jello
  • 1 package (3 oz) berry flavored Jello
  • 1 package (3 oz) blue raspberry flavored Jello
  • 2 cups cold water
  • 1 cup whipped cream
  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 package (16 oz) graham crackers
  • Fresh berries (strawberries, blueberries, raspberries) for garnish

Instructions

  1. Prepare the Jello Layers: In a large mixing bowl, dissolve each Jello flavor separately by adding 1 cup of boiling water to each package. Stir until fully dissolved, about 2-3 minutes. Add cold water (2 cups total) to each bowl and refrigerate for about 30-45 minutes, until slightly thickened.
  2. Make the Cream Cheese Filling: In another bowl, blend the softened cream cheese and powdered sugar until smooth. Gently fold in the whipped cream.
  3. Assemble the Layers: In a 9×13-inch pan, layer half of the graham crackers, then half of the cream cheese mixture, followed by the first layer of Jello. Repeat with the remaining graham crackers,. cream cheese, and another Jello layer.
  4. Finish with the Last Layer: Top with the last Jello, cover with plastic wrap, and chill in the fridge for at least 4 hours or overnight.
  5. Serve and Enjoy: Once set, slice into squares, garnish with fresh berries, and serve cold.
