Easy Amaretto Cherries

A delightful copycat recipe inspired by Lazzaroni Amaretto Cherries that combines sweet cherries with fragrant amaretto and a hint of vanilla.

  • 33.5 lbs Cherries (pitted)
  • 1 1/4 C Granulated Sugar
  • 1/2 C Amaretto
  • 1/2 C Water (preferably filtered)
  • 1 Lemon (juiced; zest saved for another purpose)
  • 1 tsp Vanilla Extract
  • 1 tsp Almond Extract

Instructions

  1. Prep Your Cherries: Wash your cherries under cool water, gently rubbing off any impurities. Pit them using a cherry pitter or a small paring knife.
  2. Create the Syrup: In a large saucepan, combine the 1 1/4 cups of granulated sugar and 1/2 cup of filtered water. Bring to a gentle simmer over medium heat, stirring occasionally until the sugar dissolves.
  3. Add Flavorings: Remove the pan from heat and stir in the 1/2 cup of amaretto, fresh lemon juice, 1 tsp of vanilla extract, and 1 tsp of almond extract.
  4. Combine Cherries and Syrup: Transfer your pitted cherries into clean, sterilized jars. Pour the cool syrup over the cherries until they are fully submerged.
  5. Seal Up the Goodness: Close each jar tightly with a lid. Store them in the refrigerator.
  6. Let It Rest: Allow the cherries to sit in the fridge for at least 24 hours before using.
  7. Enjoy!: Serve the cherries as a topping on desserts like ice cream or yogurt.

Notes

These cherries can last up to 2-3 weeks in the fridge. Use clean utensils each time you dive in.
