Easy Asian Cucumber Salad

A refreshing and simple cucumber salad with a delightful crunch, perfect as a side dish or light lunch.

Ingredients

  • 5 Persian cucumbers
  • 1/2 tsp salt
  • 1/2 tbsp sesame oil
  • 3/4 tbsp light soy sauce
  • 1/21 tbsp sugar
  • 3/4 tbsp rice vinegar
  • 1 tbsp chili oil
  • 1/2 tbsp garlic (minced, optional)
  • 1/2 tbsp sesame seeds

Instructions

  1. Prep the cucumbers: Wash cucumbers, slice them in half lengthwise, then crosswise into half-moons.
  2. Salt it up: Place cucumbers in a colander, sprinkle with salt, and let sit for 15 minutes.
  3. Whisking up the dressing: In a bowl, combine sesame oil, soy sauce, sugar, rice vinegar, and chili oil. Whisk until sugar dissolves.
  4. Rinse and dry: Rinse cucumbers under cold water to wash off excess salt and pat dry.
  5. Mix it all together: Toss dried cucumbers in the dressing until coated.
  6. Garnish and serve: Sprinkle with garlic and sesame seeds, toss, and serve.
  7. Chill (optional): Refrigerate for 10-20 minutes to meld flavors if desired.

Notes

Add more chili oil or sugar to taste. You can also try adding fresh herbs or other vegetables for variation.
