  • 1 cup Quinoa
  • 1 can Black Beans
  • 2 cups Spinach
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic
  • Salt and Pepper (to taste)
  • 1 tablespoon Lemon Juice

Instructions

  1. Prep your ingredients by chopping chicken, mincing garlic, and rinsing quinoa.
  2. Cook the quinoa in a medium saucepan with 2 cups of water and a pinch of salt, simmer for about 15 minutes.
  3. Sauté the chicken in a large skillet with olive oil, seasoning with salt and pepper, until golden brown, about 6-7 minutes.
  4. Add the minced garlic and sauté for another minute.
  5. Incorporate the spinach and cook until wilted, about 2-3 minutes.
  6. Combine the cooked quinoa, sautéed chicken, and spinach in a large bowl, adding lemon juice to taste.
