Easy Grilled Asian Chicken Skewers with Honey Garlic Sauce

  • Bamboo skewers (soaked in water for 30 minutes)
  • 1/4 cup butter
  • 4 cloves garlic (minced)
  • 1/2 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons cornstarch
  • 1/4 cup water

Instructions

  1. Marinate your chicken: In a large bowl, combine the minced garlic, honey, apple cider vinegar, soy sauce, brown sugar, and 1/4 cup of water. Mix well until the sugar dissolves. Add the chicken cubes into the marinade, ensuring each piece is well-coated. Cover and let it marinate in the refrigerator for at least 30 minutes.
  2. Prepare the skewers: Soak bamboo skewers in water for at least 30 minutes before grilling to prevent burning.
  3. Preheat the grill to medium-high heat, around 375°F (190°C).
  4. Skewer the chicken pieces: Thread the marinated chicken cubes onto the skewers with space between each piece. Optional: add colorful veggies.
  5. Make the honey garlic sauce: In a saucepan, melt the butter over medium heat, stir in the remaining marinade and bring it to a simmer. Mix cornstarch with 1/4 cup of water and add to the sauce, stirring until thickened, about 2-3 minutes.
  6. Grill the skewers: Cook on the grill for about 5-7 minutes on each side, brushing with honey garlic sauce during the last few minutes.
  7. Check for doneness: Ensure chicken reaches an internal temperature of 165°F (74°C).
  8. Rest and serve: Allow skewers to rest before serving drizzled with remaining honey garlic sauce.

Notes

For a spicier twist, add red pepper flakes to the marinade. Customize by swapping half the chicken for your favorite seasonal vegetables.
