Apple Cider Cheesecake

A fall-inspired cheesecake infused with the warm, spiced flavors of apple cider, creamy and rich in texture.

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup reduced fresh apple cider
  • 1 tablespoon all-purpose flour

Instructions

  1. Combine the graham cracker crumbs and melted butter in a medium bowl until it resembles wet sand.
  2. Press this mixture firmly into the bottom of a 9-inch springform pan.
  3. Preheat your oven to 350°F (175°C) and bake the crust for about 10 minutes.
  4. Let the crust cool while preparing the filling.
  5. Beat the cream cheese in a large mixing bowl until smooth.
  6. Add the granulated sugar and vanilla extract, blending until creamy.
  7. Add the eggs one at a time, mixing well after each addition.
  8. Pour in the reduced apple cider and blend just until combined.
  9. Fold in the flour using a spatula.
  10. Pour the filling into the cooled crust and smooth it out.
  11. Bake for about 45 minutes, or until the outer edges are set but the center is still slightly jiggly.
  12. Turn off the oven and leave the cheesecake inside with the door cracked open for about an hour.
  13. Remove from the oven and let cool at room temperature before refrigerating for at least four hours.

Notes

Serve with whipped cream and a sprinkle of cinnamon for an extra touch of fall flavor. Adjust sweetness to taste.
