Ingredients
Scale
4 boneless, skinless chicken breasts
1 avocado, diced
1/4 cup fresh cilantro, chopped
2 tablespoons chili powder
1 tablespoon lime juice
Salt and pepper to taste
Olive oil for cooking
Instructions
Start by gathering all your ingredients — this makes things so much easier! Preheat your grill or stovetop grill pan over medium-high heat.
In a small bowl, mix together the chili powder, lime juice, salt, and pepper. Rub this mixture all over the chicken breasts; let the chicken marinate for about 15-20 minutes.
Drizzle olive oil on the grill grates or in the pan to prevent sticking. Place the marinated chicken breasts on the grill and close the lid. Cook for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C).
Once cooked, transfer the chicken to a plate and cover it loosely with foil. Let them rest for about 5 minutes.
While the chicken is resting, dice your avocado and chop the cilantro.
Slice the chicken into strips and serve it on a plate. Top generously with diced avocado and sprinkle with fresh cilantro.
Notes
Serve this dish with cilantro lime rice or a black bean salad for a complete meal.
