Flourless Cottage Cheese Pancakes

A simple and satisfying breakfast packed with protein, these Flourless Cottage Cheese Pancakes are fluffy, delicious, and easy to make.

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup almond flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Butter or oil for cooking

Instructions

  1. Blend the ingredients: In a blender, combine cottage cheese, eggs, almond flour, vanilla extract, baking powder, and salt. Blend on high for 30 seconds until smooth.
  2. Preheat the pan: Heat a non-stick skillet over medium heat and add butter or oil to coat the surface.
  3. Pour and flip: Pour about 1/4 cup of batter into the pan. Cook for 2-3 minutes until bubbles form, then flip and cook an additional 1-2 minutes until golden brown.
  4. Keep ’em warm: Transfer pancakes to a warm plate while you cook the remaining batter.
  5. Serve and enjoy: Top with fresh berries, Greek yogurt, maple syrup, or nut butter as desired.

Notes

For a dairy-free version, use silken tofu instead of cottage cheese. Experiment with different toppings and mix-ins for added flavor!
