Patriotic Meringue Kisses

Delightful, colorful meringue kisses perfect for summer barbecues and festive holidays.

Ingredients

  • 4 large egg whites, at room temperature
  • 1 cup superfine sugar (or granulated sugar pulsed in a blender)
  • 1/4 teaspoon cream of tartar (or 1/2 teaspoon lemon juice or vinegar)
  • Pinch of salt
  • Red gel food coloring
  • Blue gel food coloring

Instructions

  1. Preheat your oven to 200°F (93°C).
  2. Whip the egg whites and salt in a clean, dry mixing bowl until frothy.
  3. Add the cream of tartar and increase the speed to high, beating until soft peaks form.
  4. Incorporate sugar gradually, 1 tablespoon at a time, until stiff peaks form and meringue is glossy.
  5. Color the meringue by dividing it into two bowls, adding red gel food coloring to one and blue to the other.
  6. Pipe small mounds onto lined baking sheets using a piping bag.
  7. Bake for about 1 ½ hours, until dry and easily removed from parchment.
  8. Cool in the oven with the door ajar for another hour.

Notes

Store meringue kisses in an airtight container at room temperature, away from humidity.
