Garlic Balsamic Steak Bites

Succulent bites of tender steak marinated in a zingy garlic balsamic sauce, served with roasted baby gold potatoes and crisp green beans.

  • 2 lb lean steak (trimmed & cubed into 1-inch pieces)
  • 1 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 tbsp balsamic vinegar
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp garlic powder
  • ¼ tsp crushed red pepper (optional)
  • 3 cloves garlic (minced)
  • 2 tbsp balsamic vinegar (for sauce)
  • 2 tbsp low-sodium beef broth
  • 1 tsp honey
  • 1 tbsp soy sauce (for sauce)
  • 1.5 lb baby gold potatoes (quartered)
  • ½ tbsp olive oil (for potatoes)
  • ½ tsp salt (for potatoes)
  • ½ tsp black pepper (for potatoes)
  • ½ tbsp garlic powder (for potatoes)
  • 1 tsp paprika
  • 12 oz fresh green beans (trimmed)
  • ½ tbsp olive oil (for green beans)
  • ½ tsp salt (for green beans)
  • ½ tsp black pepper (for green beans)
  • ½ tbsp garlic powder (for green beans)

Instructions

  1. Marinate the steak by placing cubed steak into a large mixing bowl. Add olive oil, soy sauce, balsamic vinegar, salt, black pepper, garlic powder, and minced garlic. Mix well and let marinate for at least 30 minutes.
  2. Prepare the sauce in a small bowl by combining balsamic vinegar, beef broth, honey, and soy sauce. Whisk together.
  3. Roast the potatoes by preheating the oven to 400°F (200°C). Toss quartered potatoes with olive oil, salt, black pepper, garlic powder, and paprika. Spread on a baking sheet and roast for 25-30 minutes.
  4. Cook the steak in a large skillet over medium-high heat for 2-3 minutes on each side or until medium-rare. Pour the sauce over the steak and let it simmer for 1-2 minutes.
  5. Sauté the green beans in another pan with olive oil, salt, black pepper, and garlic powder for 5-7 minutes until tender.
  6. Plate by creating a bed of roasted potatoes followed by steak bites and sautéed green beans.

Notes

Add fresh parsley for garnish and possibly a side of creamy garlic dip or Greek yogurt for extra flavor.
