Gordon Ramsay’s Beef Stroganoff

A classic Beef Stroganoff with tender beef in a rich, creamy sauce served over noodles, perfect for a comfort meal.

  • 600 g rib-eye steak, trimmed and pounded ¾ cm thick
  • 300 g cremini mushrooms, sliced ⅛-inch thick
  • 1 medium onion, thin-sliced
  • 1 Tbsp Dijon mustard
  • 150 ml full-fat sour cream
  • 500 ml low-salt beef broth
  • 2 Tbsp butter
  • 1 Tbsp plain flour
  • 2 Tbsp neutral oil, for searing
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste
  • Chopped chives, for garnish
  • Egg noodles or tagliatelle, for serving

Instructions

  1. Prepare Your Ingredients: Gather all your ingredients, wash, slice, and trim everything as described.
  2. Get Those Noodles Boiling: In a large pot, boil salted water and cook your noodles according to package instructions (about 8-10 minutes). Drain and set aside, tossing with olive oil.
  3. Sear the Steak: Heat neutral oil in a skillet over medium-high heat and sear the rib-eye for 3-4 minutes on each side. Remove and let rest.
  4. Sauté the Aromatics: In the same skillet, melt butter and sauté onion for 4 minutes, add mushrooms and sauté for another 5-7 minutes.
  5. Create the Sauce: Sprinkle flour and stir, then pour in beef broth, simmering for 5 minutes.
  6. Add the Finishing Touches: Stir in mustard and sour cream, slice steak against the grain, add to skillet, and simmer gently for 3-5 minutes.
  7. Season and Serve: Season with salt and pepper, garnish with chives.
  8. Serve Over Noodles: Plate beef stroganoff over noodles, creating a nest for presentation.

Notes

For extra flavor, serve with buttery garlic bread or a fresh green salad.
