Greek Chicken Bowls

A vibrant and flavorful Greek Chicken Bowl packed with grilled chicken, fresh veggies, and creamy feta, perfect for a quick and satisfying meal.

  • 1 lb Chicken Breast
  • 1/4 cup Olive Oil
  • Juice of 1 Lemon
  • 3 cloves Garlic, minced
  • 1 tbsp Oregano
  • 1 tsp Salt
  • Black Pepper, to taste
  • 2 Bell Peppers, chopped
  • 1 Zucchini, chopped
  • 1 Red Onion, chopped
  • 2 cups Cooked Rice
  • 1/2 cup Feta Cheese, crumbled
  • Fresh Parsley, for garnish

Instructions

  1. Create the Marinade: In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Whisk until well blended.
  2. Time to Marinate: Place chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Let sit for at least 30 minutes.
  3. Chop ‘Em Up: While marinating, wash and chop bell peppers, zucchini, and red onion into bite-sized pieces.
  4. Cook the Chicken: Grill chicken on medium-high heat for 6-7 minutes on each side until fully cooked (165°F internal temperature).
  5. Cook the Veggies: In the same pan or grill, add a bit more olive oil and sauté the chopped veggies for 5-7 minutes until tender and slightly charred.
  6. Cook the Rice: Follow package instructions for cooking rice if not done already.
  7. Layer It Up: Start with a scoop of cooked rice, add sliced grilled chicken, sautéed veggies, crumbled feta, and sprinkle with fresh parsley.
