Greek Chicken Bowls

A vibrant dish combining succulent chicken, fresh veggies, and creamy tzatziki sauce that brings a taste of Greece to your home.

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cooked rice or quinoa
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1 red onion, finely chopped
  • Feta cheese, crumbled (optional)
  • Fresh parsley, chopped (for garnish)
  • For tzatziki sauce:
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • Salt to taste

Instructions

  1. Marinate the chicken. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Add the chicken breasts, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.
  2. Cook the chicken. Heat a skillet over medium-high heat and drizzle with olive oil. Once hot, add the marinated chicken breasts. Cook for 6-7 minutes on each side until golden brown and cooked through. Remove and let them rest.
  3. Prepare the tzatziki sauce. In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt. Mix until smooth.
  4. Assemble the bowls. Start with a base of rice or quinoa, slice the chicken, and layer with cucumber, tomatoes, red onion, feta cheese, and tzatziki sauce. Garnish with fresh parsley.

Notes

Feel free to substitute chicken with turkey or chickpeas for a plant-based option.
