A vibrant and flavorful Greek Chicken Bowl packed with marinated chicken, fresh veggies, and creamy tzatziki.

  • 2 Chicken Breasts
  • 1 Cup Cooked Rice or Quinoa
  • 1 Cup Cherry Tomatoes, Halved
  • 1 Cucumber, Diced
  • 1 Red Onion, Thinly Sliced
  • 1 Red Bell Pepper, Diced
  • ½ Cup Feta Cheese, Crumbled
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Lemon Juice
  • Salt and Pepper to Taste
  • Tzatziki Sauce (Store-bought or Homemade)

Instructions

  1. Marinate the Chicken: Beat the chicken breasts with a meat mallet and marinate with olive oil, lemon juice, salt, and pepper for 15-30 minutes.
  2. Cook the Chicken: Cook in a skillet over medium heat for 6-7 minutes on each side until cooked through. Let rest and slice.
  3. Prepare the Grains: Cook rice or quinoa according to package instructions using broth for flavor.
  4. Chop the Veggies: Dice the cucumber, halve the cherry tomatoes, slice the onion, and dice the bell pepper.
  5. Assemble the Bowl: Start with rice or quinoa, layer the veggies, sliced chicken, and feta cheese.
  6. Drizzle with Tzatziki: Add a generous drizzle of tzatziki sauce on top.

Notes

Store leftovers in airtight containers in the fridge for up to three days. For a lighter option, replace chicken with grilled shrimp or tofu.
