  • 1/2 cup cherry tomatoes, halved

  • 3 scallions, sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the orzo: Bring a large pot of salted water to a boil, add orzo, and cook for 8-10 minutes until al dente.
  2. Grill the corn: Preheat the grill to medium-high heat, add corn, and grill for about 10-12 minutes until charred.
  3. Prep your veggies: Chop cherry tomatoes, red onion, dill, and scallions.
  4. Toss everything together: In a large bowl, combine orzo, grilled corn, tomatoes, onion, dill, and scallions.
  5. Make the dressing: Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.

Notes

This salad can be made in advance but keep the dressing separate until serving to avoid sogginess.
