Harvest Chicken Casserole

A cozy and nutritious chicken casserole filled with sweet potatoes, broccoli, and cheddar cheese, perfect for any season.

  • 2 Chicken Breasts
  • 2 Sweet Potatoes
  • 1 Broccoli Head
  • 1 cup Cheddar Cheese, shredded
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the chicken by seasoning with salt, pepper, garlic powder, and onion powder, then cook until golden brown, about 5-7 minutes per side. Rest and chop into bite-sized pieces.
  3. Roast the sweet potatoes after peeling and chopping them into small cubes, toss with olive oil, salt, and pepper, and bake for about 20 minutes until tender.
  4. Steam the broccoli florets for about 5 minutes until bright green.
  5. Combine the chopped chicken, roasted sweet potatoes, steamed broccoli, and cheese in a large bowl, mixing gently.
  6. Transfer the mixture into a greased 9×13-inch baking dish and top with reserved cheese.
  7. Bake covered with foil for 30 minutes, then uncovered for an additional 10-15 minutes until cheese is bubbly and golden.
  8. Cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Can be made ahead and stored in the fridge for up to 24 hours before baking.
