Harvest Cobb Salad

A delightful blend of vibrant greens, juicy chicken, crispy bacon, and sweet apples, topped with crumbled blue cheese.

Ingredients

  • 2 cups Mixed Greens (baby spinach, kale, or arugula)
  • 1 cup Chicken (Grilled or Rotisserie)
  • 4 slices Bacon (Crispy)
  • 2 Eggs (Hard-boiled)
  • 1 Apple (sliced, preferably Honeycrisp)
  • 1/2 cup Blue Cheese (crumbled)
  • Optional: 1/4 cup Chopped walnuts or pecans
  • Optional: Dressing (balsamic vinaigrette or honey mustard)

Instructions

  1. Cook the Chicken: Season and grill raw chicken for 6-7 minutes on each side until cooked. Let it rest before slicing.
  2. Prepare the Bacon: Crisp bacon in a skillet until desired crispiness, and drain on paper towels.
  3. Hard-Boil the Eggs: Cover eggs with water, boil, then let sit for 10-12 minutes before cooling in ice water.
  4. Slice the Apples: Core and slice apples thinly, sprinkle lemon juice to prevent browning.
  5. Assemble the Base: Layer mixed greens in a large salad bowl or platter.
  6. Add Ingredients: Top greens with chicken, bacon, eggs, apple slices, and sprinkle with blue cheese.
  7. Final Touches: Drizzle with your favorite dressing and serve.

Notes

For added crunch, include walnuts or pecans. Serve immediately for the freshest taste. Can be prepared ahead of time but keep greens and dressing separate until serving.
