Healthy Chicken & Sweet Potato Rice Bowl

A comforting and nourishing rice bowl filled with chicken, sweet potatoes, and vibrant flavors, perfect for a cozy meal.

  • 2 chicken breasts
  • 2 sweet potatoes, diced
  • 1 cup cooked rice (brown or white)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare your sweet potatoes: Wash, peel (if desired), and dice into even cubes. Spread on a baking sheet lined with parchment paper, drizzle with 1 tablespoon of olive oil, and sprinkle with salt, pepper, and half the paprika. Toss to coat.
  3. Roast the sweet potatoes for about 25-30 minutes until golden and tender, stirring halfway through.
  4. Cook the chicken in a skillet with the remaining tablespoon of olive oil, seasoned with garlic powder, remaining paprika, salt, and pepper, for 6-7 minutes on each side until cooked through.
  5. Remove the chicken from the skillet and let it rest for about 5 minutes.
  6. Prepare your rice while the chicken is resting.
  7. Assemble your bowl: Start with a scoop of rice, add roasted sweet potatoes, and slice the chicken into strips.
  8. Garnish with fresh herbs and enjoy!

Notes

Feel free to experiment with grains and add spicy toppings for variety.
