  • 1 can white beans (like cannellini or great northern)
  • 1 cup chicken broth
  • 1 cup corn (frozen or canned)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup Greek yogurt (or sour cream)
  • 1 cup shredded cheese (optional)
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish (optional)

Instructions

  1. Prep your ingredients: Dice your onion, mince your garlic, and shred your chicken if you haven’t already.
  2. Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-5 minutes until translucent.
  3. Add garlic and spices: Toss in the minced garlic, cumin, and chili powder. Sauté for about 30 seconds until fragrant.
  4. Combine the chicken and broth: Stir in your cooked, shredded chicken followed by the chicken broth. Bring to a gentle simmer.
  5. Add white beans and corn: Once bubbling, stir in the white beans and corn, simmer for another 5-10 minutes.
  6. Final touches: Remove from heat and stir in Greek yogurt until fully integrated.
  7. Taste and adjust seasoning: Always taste before serving! Adjust salt and pepper as needed.
  8. Plate and serve: Ladle into warm bowls and top with cheese, cilantro, or your favorite toppings.
