Hearty Blueberry Protein Muffins

Delicious and wholesome protein-packed muffins that are perfect for breakfast or a snack.

Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup protein powder
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 1/2 cup milk (or plant-based milk)
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the dry ingredients in a large bowl: whole wheat flour, protein powder, rolled oats, baking powder, baking soda, and salt.
  3. Blend the wet ingredients in a separate bowl: honey (or maple syrup), applesauce, milk, and eggs.
  4. Combine the wet mixture with the dry ingredients, being careful not to overmix.
  5. Add the blueberries gently to the batter.
  6. Prepare the muffin tin with liners or cooking spray.
  7. Fill each muffin cup 2/3 full with batter.
  8. Bake for 15-20 minutes, or until a toothpick comes out clean.
  9. Cool in tin for 5 minutes before transferring to a wire rack.

Notes

These muffins can be frozen for a quick snack later. Substitute flax eggs for a vegan version.
