Heavenly Pineapple Fritters That Bring Tropical Joy

  • 1/4 cup Granulated sugar
  • 1 tablespoon Baking powder
  • 1/4 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1 large Egg
  • 1/2 cup Milk
  • 1 whole Fresh pineapple, sliced into rings
  • 2 cups Vegetable oil
  • 1 tablespoon Additional cinnamon and sugar

Instructions

  1. Prep your pineapple: Slice fresh pineapple into rings, about 1/2 inch thick, removing the hard core.
  2. Mix dry ingredients: In a bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  3. Add wet ingredients: Make a well in the dry mix, add the egg and milk, and whisk until combined.
  4. Heat the oil: Pour vegetable oil into a skillet and heat to 350°F (175°C).
  5. Coat the pineapple rings: Dip each ring in the batter, ensuring a 1/4-inch coating.
  6. Fry them up: Fry coated rings for 2–3 minutes on each side until golden brown.
  7. Drain the excess oil: Use a slotted spoon to remove fritters and place them on paper towels.
  8. Dust with cinnamon sugar: Sprinkle with cinnamon sugar while warm.

Notes

Serve with honey or maple syrup, and consider adding a scoop of vanilla ice cream or whipped cream for extra indulgence.
