High-Protein Chicken Ranch Quesadilla

  • 1 Laughing Cow cheese wedge

Instructions

  1. Gather Your Ingredients: Pull out all your ingredients and tools.
  2. Prep the Chicken Mixture: In a bowl, mix shredded chicken, Greek yogurt, and ranch seasoning.
  3. Heat the Skillet: Place your skillet over medium heat and coat it lightly with cooking spray or oil.
  4. Assemble the Quesadilla: Lay the tortilla flat, add cheese, chicken mixture, Laughing Cow cheese, and fold.
  5. Cook to Perfection: Carefully place the quesadilla in the skillet, cooking for 2-3 minutes per side until golden brown.
  6. Flip and Finish: Gently flip the quesadilla and repeat the cooking process on the other side.
  7. Slice and Serve: Remove from skillet, let sit, then slice into wedges and serve with guacamole or salsa.

Notes

You can prep the chicken and cheese mixture ahead of time to save on cooking time. This recipe also freezes well.
