High-Protein Chicken Ranch Quesadilla

A deliciously high-protein quesadilla featuring shredded chicken, Greek yogurt, and ranch flavor for a guilt-free treat.

  • 1 low-carb tortilla
  • 1/2 cup cooked, shredded chicken
  • 2 tablespoons Greek yogurt
  • 2 wedges Laughing Cow cheese
  • Salt and pepper to taste
  • Cooking spray or oil for the pan

Instructions

  1. Prep your ingredients by shredding the chicken and bringing the Greek yogurt to room temperature.
  2. Mix the shredded chicken, Greek yogurt, and one wedge of Laughing Cow cheese in a bowl along with salt and pepper.
  3. Assemble the quesadilla by spreading half the chicken mixture over one half of the tortilla and folding it.
  4. Heat a non-stick skillet over medium heat and coat it lightly with cooking spray or olive oil.
  5. Cook the quesadilla for about 3-4 minutes on one side until golden brown, then flip gently.
  6. Melt the remaining wedge of cheese on top before flipping to ensure it melts beautifully.
  7. Monitor the cooking for another 3-4 minutes until golden and all the cheese is melted.
  8. Slice the quesadilla into wedges and serve.

Notes

Serve with a dollop of Greek yogurt, homemade salsa, or guacamole. Great with a side salad or fresh cilantro.
