High Protein Chicken Ranch Quesadilla

A quick and satisfying quesadilla filled with shredded chicken, ranch dressing, and plenty of cheese for a protein-packed meal.

Ingredients

  • 2 large tortillas
  • 1 cup cooked chicken, shredded
  • 1/2 cup ranch dressing
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup bell peppers, sliced
  • 1/2 cup onions, sliced
  • Cooking spray or olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients, chef style!
  2. Sauté your veggies in a skillet over medium heat for about 3-5 minutes.
  3. Mix the shredded chicken with the ranch dressing in a separate bowl.
  4. Assemble the quesadilla by layering ranch chicken, veggies, and cheese on half of a tortilla.
  5. Heat a skillet and lightly coat it with cooking spray or olive oil.
  6. Cook the quesadilla for 3-5 minutes on each side until golden and crispy.
  7. Slice the quesadilla into wedges and serve.
  8. Dive in with extra ranch dressing, salsa, or hot sauce!

Notes

You can change up the filling by using black beans for a vegetarian version, or substitute ranch dressing with taco seasoning for a different flavor. Feel free to get creative with your fillings!
