High-Protein Crispy Cottage Cheese Flatbread Chicken Wraps

Delicious and protein-packed crispy cottage cheese flatbread wraps filled with tender chicken and fresh veggies.

  • 1 cup cottage cheese (full-fat or low-fat)
  • 2 large eggs
  • 1/2 cup oat flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 2 medium boneless skinless chicken breasts (about 1 lb)
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon black pepper
  • 1/2 cup Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 cup shredded romaine lettuce
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons chopped fresh parsley or cilantro

Instructions

  1. In a large bowl, combine the cottage cheese and eggs. Use a whisk to blend them until smooth.
  2. Add oat flour, garlic powder, baking powder, and salt to the mix. Stir until just combined.
  3. Heat up a skillet over medium heat and drizzle in the olive oil. Reduce the heat to low once the oil is shimmering.
  4. For each flatbread: Scoop about 1/4 cup of the mixture into the skillet and spread it out into a round shape, about 1/4-inch thick. Cook for 3-4 minutes on each side.
  5. While the flatbreads are cooking, season your chicken breasts with paprika, cumin, chili powder, black pepper, and a pinch of salt.
  6. In a separate skillet, heat a little olive oil over medium-high heat and cook the chicken for about 5-7 minutes on each side until cooked through.
  7. Once cooked, let your chicken rest for a few minutes before slicing it thinly.
  8. Prepare your toppings by mixing the Greek yogurt with lemon juice in a small bowl.
  9. On each flatbread, spread some lemony Greek yogurt sauce, then layer on the sliced chicken, romaine, cherry tomatoes, red onions, and sprinkle fresh herbs.
  10. Wrap it up by folding in the sides of the flatbread and rolling from the bottom up.

Notes

For vegan options, substitute cottage cheese with vegan cream cheese and use flax eggs instead of regular eggs.
