High-Protein Pancake Sausage Mini Muffins

These mini muffins combine the beloved flavors of pancakes and sausage while packing a protein punch for a healthy breakfast on the go.

  • 2 cups Kodiak pancake mix (or other protein pancake mix)
  • 1 lb ground sausage, browned and crumbled
  • 2 cups milk
  • 2 eggs
  • ¼ cup maple syrup
  • 1 cup shredded cheese (cheddar or Colby jack)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease your muffin tin with cooking spray or use silicone muffin cups.
  3. Brown the sausage in a skillet over medium heat, stirring to crumble until fully cooked, about 5-7 minutes.
  4. Whisk together the milk, eggs, and maple syrup in a large bowl.
  5. Stir in the Kodiak pancake mix gently; a few lumps are fine.
  6. Fold in the browned sausage and shredded cheese until evenly distributed.
  7. Spoon the batter into each muffin cup, filling them about three-quarters full.
  8. Bake for 15-18 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the muffins to cool for a few minutes before transferring them to a wire rack.
