Honey Garlic Chicken and Sweet Potatoes

A quick and delicious one-pan meal featuring juicy honey garlic chicken breasts, sweet potatoes, and vibrant green beans.

  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 1 pound green beans, trimmed
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare your sweet potatoes by peeling and cubing them into bite-sized chunks.
  3. Mix the honey, soy sauce, minced garlic, olive oil, paprika, thyme, salt, and black pepper in a bowl.
  4. Marinate the chicken in half of the sauce for about 15 minutes.
  5. Assemble the sweet potatoes and green beans on a baking sheet, drizzling them with the remaining sauce.
  6. Nestle the marinated chicken breasts on top of the vegetables.
  7. Bake for 25-30 minutes, until the chicken is cooked through and the sweet potatoes are tender.
  8. Drizzle any remaining sauce over the chicken and return to the oven for an additional 2-3 minutes.
  9. Serve and enjoy your delightful meal!
