  • 1 cup vanilla protein powder
  • ¾ cup oat flour (or finely ground oats)
  • 4 oz cream cheese, softened
  • 3 tbsp Greek yogurt (plain or vanilla)
  • 2 tbsp honey or maple syrup
  • ¼ cup freeze-dried strawberries, crushed
  • ½ tsp vanilla extract
  • Pinch of salt
  • Pink/red sprinkles or extra crushed strawberries (optional, for coating)

Instructions

  1. Prep your workstation: Clean and clear your workspace.
  2. Mix the dry ingredients: In a large mixing bowl, combine your vanilla protein powder and oat flour.
  3. Cream the cream cheese: In a separate bowl, use a hand mixer or a spatula to cream the softened cream cheese until it’s fluffy.
  4. Add yogurt and honey: To the whipped cream cheese, add your Greek yogurt and honey, and mix until smooth.
  5. Combine wet and dry: Gradually incorporate your dry ingredients into the wet ingredients.
  6. Stir in strawberries: Fold in the crushed freeze-dried strawberries and vanilla extract.
  7. Chill the mixture: Cover your bowl with plastic wrap and let the mixture chill in the fridge for about 30 minutes.
  8. Roll the balls: Take a heaping tablespoon of the mixture and roll it into bite-sized balls.
  9. Coat the balls (optional): Roll your balls in pink sprinkles or extra crushed strawberries for a colorful finish.
  10. Chill again: Place the rolled protein balls on a parchment-lined tray and chill for another 15-20 minutes.

Store these protein balls in an airtight container in the fridge for about a week, or freeze for up to a month.
