Vegetable Tortilla Roll-Ups

  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 (1-ounce) packet Ranch seasoning mix
  • 1 teaspoon dried dill weed
  • 1 cup shredded cheddar cheese
  • 2 cups chopped vegetables (carrots, bell peppers, broccoli, etc.)
  • ¾ cup shredded carrots
  • ¾ cup finely chopped broccoli
  • ½ cup chopped red bell peppers
  • 4 lavash bread sheets or 5 flour tortillas (10-inch size)

Instructions

  1. Mix the cream cheese, sour cream, Ranch seasoning mix, and dill weed until creamy.
  2. Add the shredded cheddar cheese and fold gently.
  3. Toss in the shredded carrots, chopped broccoli, and red bell peppers, mixing until coated.
  4. Prep the tortillas by laying them flat on a surface and spreading the veggie mix evenly.
  5. Roll the tortillas tightly, tucking in the sides as you go.
  6. Chill the roll-ups in the fridge for at least 30 minutes.
  7. Slice into pinwheels and serve on a platter.

Notes

These roll-ups can be made ahead of time and hold well in the refrigerator for up to 2 days. Consider variations like Mediterranean or vegan options for a twist.
