Juicy Street Corn Pasta Salad

A flavorful pasta salad with juicy corn, fresh vegetables, and creamy feta—perfect for summer gatherings!

Ingredients

  • 8 oz pasta (like rotini or penne)
  • 2 cups corn (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp lime juice
  • Salt and pepper to taste

Instructions

  1. Cook your pasta by boiling salted water and cooking until al dente, about 8-10 minutes.
  2. Prep the corn by grilling fresh corn or boiling frozen/canned corn until warm.
  3. Chop your veggies: dice red bell pepper, finely chop red onion and cilantro, and halve cherry tomatoes.
  4. Make the dressing by whisking together olive oil and lime juice, seasoning with salt and pepper.
  5. Combine the cooked pasta, corn, veggies, and dressing in a large mixing bowl.
  6. Add the crumbled feta and toss gently to combine.
  7. Chill in the fridge for at least 30 minutes to let flavors meld, or serve immediately.

Notes

This pasta salad can be made a day in advance for enhanced flavors. Adjust ingredients to suit your taste!
