Creamy Low Carb Chicken Casserole with Broccoli and Bacon

A creamy, low carb chicken casserole packed with broccoli and turkey bacon, perfect for healthy meal prep.

  • 5 cups broccoli florets
  • 8 slices cooked turkey bacon, chopped
  • 4 cups cooked chicken, shredded or diced
  • 3 cloves garlic, minced
  • ½ cup shredded mozzarella
  • ½ cup shredded cheddar
  • 1 cup ranch dressing
  • ½ cup shredded cheddar (for topping)
  • ½ cup shredded mozzarella (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the bacon in a skillet over medium heat until crispy.
  3. Sauté the garlic in the remaining bacon fat for about 1 minute.
  4. Combine the cooked chicken, broccoli, garlic, bacon, mozzarella, cheddar, and ranch dressing in a mixing bowl.
  5. Transfer the mixture to a greased casserole dish.
  6. Sprinkle the remaining mozzarella and cheddar cheeses over the top.
  7. Bake for 30-35 minutes until bubbly and golden brown.
  8. Rest for 5-10 minutes before serving.

Notes

Can be frozen for up to 2 months. Thaw and reheat for easy meals on busy days.
