Crispy Zucchini Chips

Deliciously crunchy and healthy zucchini chips, perfect for snacking.

Ingredients

  • 2 medium zucchini
  • 1/2 cup Panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 large eggs, beaten
  • Olive oil spray

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare a large baking sheet by lining it with parchment paper.
  3. Slice the zucchinis into 1/8-inch thick rounds.
  4. Dab the zucchini slices dry with a paper towel.
  5. Set up your dipping station with beaten eggs, breadcrumb mix, and an empty bowl.
  6. Coat the zucchini slices in egg and then in the breadcrumb mixture.
  7. Spray the coated zucchini lightly with olive oil and place them on the baking sheet.
  8. Bake for 20-25 minutes, flipping halfway through.
  9. Cool for a few minutes before enjoying.

Notes

For added flavor, experiment with different herbs and spices.
