  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup (115 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 2 large eggs
  • 2 tsp pure vanilla extract
  • ½ cup (120 ml) buttermilk
  • 2 tbsp key lime juice (fresh)
  • 1 tbsp key lime zest
  • ¾ cup (170 g) unsalted butter, softened (for frosting)
  • 3 cups (360 g) icing sugar, sifted
  • 2 tbsp key lime juice (for frosting)
  • 1 tsp lime zest
  • 12 tbsp cream or milk (as needed)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with your favorite cupcake liners.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.
  3. Cream butter and sugar: In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
  4. Add eggs and vanilla: Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
  5. Combine dry ingredients with wet: Gradually add the flour mixture to the butter mixture, alternating with the buttermilk. Mix until just combined; then add the key lime juice and zest.
  6. Fill the cupcake liners about 2/3 full.
  7. Bake for about 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool the cupcakes in the pan for about 5 minutes before transferring to a wire rack to cool completely.
  9. Make the frosting: Cream the softened butter, gradually add icing sugar, key lime juice, and lime zest. Adjust consistency with cream or milk as needed.
  10. Frost the cooled cupcakes with the lime frosting.
