Lasagna Soup

A cozy, comforting soup that combines all the flavors of traditional lasagna into a delicious bowl of goodness.

  • 1 lb Ground Beef
  • 1 can (14.5 oz) Diced Tomatoes
  • 1 cup Small Pasta (like ditalini or broken lasagna noodles)
  • 1 cup Ricotta Cheese
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Beef or Vegetable Broth
  • Salt and Pepper to taste
  • Fresh Basil or Oregano for garnish
  • Freshly Grated Parmesan Cheese for serving

Instructions

  1. Brown the Meat: In a large pot, over medium-high heat, add your ground beef. Cook until browned, about 5-7 minutes. Make sure to break it up with a spatula as it cooks.
  2. Sauté the Aromatics: Once the meat is browned, add in chopped onions and minced garlic. Sauté for 3-4 minutes until they are translucent.
  3. Pour in the Tomatoes: Add the diced tomatoes and their juice to the pot. Stir and let it simmer for about 5 minutes.
  4. Add the Broth: Pour in 4 cups of beef or vegetable broth. Bring it to a gentle boil.
  5. Toss in the Pasta: Add your pasta of choice to the pot. Cook according to package instructions until al dente, about 8-10 minutes.
  6. Stir in the Ricotta: Lower the heat, and stir in the ricotta cheese until it’s warmed and well combined.
  7. Final Taste Test: Season your soup with salt, pepper, and fresh basil or oregano.
  8. Serve and Enjoy: Ladle the soup into bowls, and finish with a sprinkle of freshly grated Parmesan cheese and a few basil leaves.

Notes

For a vegetarian version, replace the ground beef with lentils or vegetables. Store leftovers in airtight containers and reheat with additional broth if needed.
