Loaded Fiesta Potato Bowls

Crispy and cheesy potato bowls filled with flavor and customizable toppings, perfect for a quick and satisfying dinner.

Ingredients

  • 4 medium russet potatoes, diced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp ground cumin
  • Salt & pepper to taste
  • 1 lb ground beef or black beans
  • 1 packet taco seasoning (or homemade)
  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup sour cream or Greek yogurt
  • ½ cup salsa
  • ¼ cup sliced green onions
  • ¼ cup chopped cilantro
  • Optional toppings: diced tomatoes, corn, jalapeños, olives

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced potatoes with olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, and pepper in a large bowl.
  3. Spread the seasoned potatoes on a lined baking sheet in a single layer.
  4. Bake for about 25-30 minutes, tossing halfway through until golden brown.
  5. Heat a skillet over medium heat and cook the ground beef (or warm black beans) with taco seasoning for about 7-10 minutes.
  6. Sprinkle shredded cheese over the crispy potatoes and return to the oven for an additional 5 minutes until the cheese melts.
  7. Assemble the bowls with potatoes, meat or beans, sour cream, salsa, green onions, cilantro, and any additional toppings.

Notes

Feel free to customize with leftover proteins and varying spices based on your preference.
