Low-Carb Bacon Cheeseburger Casserole

A satisfying casserole capturing the flavors of a classic cheeseburger while being low in carbs.

  • 1 lb ground beef
  • 1 lb bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 6 large eggs
  • 1/4 cup diced onion
  • 1/4 cup diced pickles
  • 1 tablespoon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the bacon in a large skillet over medium heat until crispy, then transfer to a paper towel-lined plate.
  3. Brown the ground beef in the same skillet, seasoning with salt and pepper, until browned and no longer pink, about 5 to 7 minutes.
  4. Combine the ground beef, crumbled bacon, diced onion, diced pickles, mustard, and shredded cheddar cheese in a large mixing bowl.
  5. Prepare the egg mixture by whisking the heavy cream and eggs in another bowl until smooth.
  6. Mix the egg and cream mixture with the meat and cheese mixture until well combined.
  7. Transfer the mixture to a greased 9×13-inch baking dish.
  8. Bake for 30-35 minutes until the top is golden and a toothpick inserted in the center comes out clean.
  9. Cool for 5-10 minutes before serving.

Notes

Serve on a bed of fresh greens or with avocado slices for added flavor.
