Mango Sago

A tropical delight that combines the sweetness of ripe mangoes, the creaminess of coconut milk, and chewy tapioca pearls for a refreshing treat.

Ingredients

  • 1 cup tapioca pearls
  • 2 cups coconut milk
  • 1 cup mango puree
  • 1/2 cup sugar
  • 1 cup diced fresh mango
  • Water for boiling

Instructions

  1. Cook the tapioca pearls by bringing a pot of water to a boil and adding the pearls. Cook for 15-20 minutes until translucent.
  2. Prepare the coconut milk mixture by heating coconut milk and sugar over low-medium heat until the sugar dissolves.
  3. Combine the cooked tapioca pearls with the warm coconut milk in a mixing bowl and let it sit to meld flavors.
  4. Add the mango puree to the mixture and fold gently until combined.
  5. Refrigerate the mixture for at least an hour to chill.
  6. Serve in bowls topped with diced fresh mango.

Notes

For a different texture, feel free to substitute tapioca pearls with small Asian rice cakes or chia seeds. You can add shredded coconut or other fruits for variation.
