Maple Dijon Chicken Salad

A refreshing salad combining protein-packed chicken, crisp apples, and a tangy maple Dijon vinaigrette.

Ingredients

  • Chicken Breast (2 pieces)
  • Lettuce (1 head, mixed greens or romaine)
  • Apple (1 large, preferably Honeycrisp or Fuji)
  • Dijon Mustard (2 tbsp)
  • Maple Syrup (2 tbsp)
  • Olive Oil (3 tbsp)
  • Apple Cider Vinegar (1 tbsp)

Instructions

  1. Cook the Chicken: Season your chicken breast with salt and pepper. Heat a skillet over medium heat, add a splash of olive oil. Once shimmering, add the chicken and sear for about 5-6 minutes until golden brown. Flip and cook for another 5-6 minutes, until cooked through. Let it rest before slicing.
  2. Prepare the Dressing: In a small bowl, mix together Dijon mustard, maple syrup, olive oil, and apple cider vinegar. Whisk until blended and adjust sweetness if needed.
  3. Assemble the Salad: Chop lettuce into bite-sized pieces and place in a bowl. Chop apple and scatter over lettuce. Slice chicken and arrange on top. Drizzle with dressing and mix gently.

Notes

Feel free to customize with nuts or other seasonal ingredients. Can be made ahead; combine just before serving for freshness.
