Mexican Birria de Res

A rich and hearty traditional Mexican dish of marinated beef cooked to tenderness in a flavorful broth, perfect for tacos or serving straight.

  • 3 lbs beef chuck roast
  • 4 cups beef broth
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 3 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh cilantro, for serving
  • Lime wedges, for serving
  • Corn tortillas, for tacos

Instructions

  1. Prep Your Chiles: Clean the dried guajillo and ancho chiles by cutting off the stems and removing the seeds. Soak in hot water until softened for 15–20 minutes.
  2. Sauté Aromatics: Heat a splash of oil in a large pot, add the chopped onion, and sauté until translucent. Add the minced garlic and cook for an additional minute.
  3. Blend the Sauce: Drain the softened chiles and blend them with the sautéed onion, garlic, beef broth, cumin, oregano, paprika, salt, and pepper until smooth.
  4. Brown the Beef: Sear the beef chuck roast on all sides in the same pot until golden brown, about 4–5 minutes per side.
  5. Combine and Simmer: Pour the blended sauce over the beef, cover, and simmer on low heat for 2.5 to 3 hours until tender.
  6. Shred the Beef: Remove the beef, shred it with forks, and return it to the pot.
  7. Taste and Adjust: Season the broth to taste and adjust the thickness with more broth or water.
  8. Serve It Up: Serve hot in bowls garnished with fresh cilantro and lime wedges alongside warm corn tortillas.

Notes

For different variations, try adding cheese to tortillas for quesatacos or substitute beef with jackfruit for a vegetarian version.
