  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • Oil for frying
  • 4 sandwich buns
  • Lettuce, Tomato, and Pickles
  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice

Instructions

  1. Marinate the Chicken: Pour the buttermilk into a bowl, add salt and pepper, and stir. Add chicken and coat well. Refrigerate for at least 1 hour or overnight.
  2. Prepare the Frying Station: Set up your work area with seasoned flour and heat the oil in a deep skillet over medium-high heat.
  3. Coat the Chicken: Remove chicken from the fridge, dip into seasoned flour, and let rest for 5 minutes.
  4. Fry the Chicken: Place chicken in hot oil and fry for about 5-7 minutes per side until golden brown. Ensure internal temperature reaches 165°F (75°C).
  5. Drain and Rest: Transfer cooked chicken to a wire rack or paper towels to drain excess oil.
  6. Make the Garlicky Mayo: Combine mayonnaise, minced garlic, and lemon juice in a bowl and mix well.
  7. Assemble the Sandwich: Spread garlicky mayo on the bun, add crispy chicken, and top with lettuce, tomato, and pickles.
