Apple Pie Enchiladas

A unique dessert combining the classic flavors of apple pie wrapped in soft tortillas, baked with a sweet, buttery glaze.

  • 1 (21-ounce) can apple pie filling or homemade apple filling (4 cups apples, sugar, and spices)
  • 6 (8-inch) flour tortillas
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your filling: Peel, core, and slice apples, then cook with sugar, cinnamon, and water until soft.
  3. Get your tortillas warm in the microwave for 20-30 seconds.
  4. Roll each tortilla with a generous scoop of filling and place seam-side down in a greased baking dish.
  5. Make the glaze by melting butter, then stirring in sugars and water, boiling until syrupy.
  6. Sprinkle the remaining cinnamon over the enchiladas.
  7. Bake for about 20-25 minutes until bubbly and golden.

Notes

Serve with vanilla ice cream or whipped cream and crushed nuts for extra flavor.
