Easy Chicken Taco Bowl

  • 1 pound chicken (boneless, skinless thighs or breasts)
  • 1 cup rice (brown or white)
  • 1 can beans (black or pinto)
  • Salsa (homemade or store-bought)
  • Optional toppings: avocado, cheese, sour cream, fresh cilantro

Instructions

  1. Start by rinsing 1 cup of your chosen rice in cold water until the water runs clear.
  2. In a medium pot, add the rinsed rice, 2 cups of water, and salt. Bring it to a boil, then cover and simmer for 15-20 minutes.
  3. While the rice cooks, season 1 pound of chicken with taco spices.
  4. Heat a tablespoon of olive oil in a skillet over medium heat. Add the chicken and cook for 6-7 minutes on each side until cooked through.
  5. If using canned beans, rinse under cold water, then warm them in a saucepan along with water or broth.
  6. Grab your bowl and start layering: rice, beans, and sliced chicken on top.
  7. Top with a generous dollop of salsa, and add optional toppings like avocado, cheese, or sour cream.
