10-Minute Chickpea Cucumber Salad

A quick and nutritious salad packed with protein and fresh vegetables, perfect for any occasion!

  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped

Instructions

  1. Prep your ingredients: Start by draining and rinsing your chickpeas in a colander. This step is super important to remove excess sodium and any canning liquid. Let them dry out a bit while you get the rest ready.
  2. Chop the veggies: Dice the cucumber into small, bite-sized pieces and finely chop your red onion. I love cutting cucumbers at an angle to create more surface area; it adds a fun aesthetic and helps with the crunch!
  3. Halve the cherry tomatoes: Slice those cherry tomatoes in half. A little trick: if you don’t want to battle with rolling tomatoes, place them between two plates and gently press down while slicing. It’s a quick hack that minimizes mess!
  4. Combine</strong, combine, combine!: In a large mixing bowl, toss together the rinsed chickpeas, diced cucumber, halved cherry tomatoes, and red onion. This is where the magic begins! Mix gently but thoroughly to coat everything evenly.
