Cowboy Casserole

A hearty Cowboy Casserole filled with ground beef, creamy soup, and crispy tater tots, perfect for busy weeknights or cozy weekends.

Ingredients

  • 1 lb ground beef
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 can (15 oz) corn, drained
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 bag (32 oz) frozen tater tots

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef in a large skillet over medium heat for about 5-7 minutes.
  3. Add the cream of mushroom soup and milk, stirring until well combined.
  4. Season with garlic powder, onion powder, salt, and pepper to taste.
  5. Mix in the drained corn and 1.5 cups of shredded cheese, reserving some cheese for topping.
  6. Assemble the mixture in a greased 9×13 inch baking dish and top with tater tots.
  7. Bake for 30-35 minutes or until the tater tots are golden brown.
  8. Add the remaining cheese on top and bake for an additional 5 minutes until melted.
  9. Serve it warm, optionally topping with fresh parsley or green onions.

Notes

Feel free to add diced jalapeños for a spicy kick or mix in fresh veggies for added nutrients!
