Cucumber Salad with Crab Meat

A refreshing summer salad combining crunchy cucumbers and creamy crab meat, perfect for warm days.

  • 3 cups Persian Cucumbers
  • 8 oz Imitation Crab Meat
  • 1/2 cup Mayo
  • 1 tbsp Vinegar
  • 1 tsp Garlic Powder
  • 1 tbsp Sugar
  • 1/4 tsp Pepper
  • 1 tbsp Sesame Seeds

Instructions

  1. Begin by washing your Persian cucumbers under cool water. Slice them in half lengthwise and scoop out the seeds using a small spoon. Then, chop them into bite-sized pieces.
  2. If you’re using imitation crab meat, gently break it apart in a bowl until it’s in small shreds.
  3. In a separate bowl, combine your mayo, vinegar, garlic powder, sugar, and pepper. Stir until everything is well blended.
  4. Slide your chopped cucumbers and shredded crab meat into the dressing bowl. Gently fold everything together using a spatula.
  5. Give your salad a taste. Adjust flavors as needed with more vinegar or sugar.
  6. Cover the bowl with plastic wrap or a lid and chill in the fridge for at least 30 minutes.
  7. Before serving, sprinkle sesame seeds on top for a finishing touch.

Notes

For added flavor, try using real crab meat or adding fresh herbs. Adjust the mayonnaise for a healthier option.
