Avocado Feta Dip

A creamy dip made with ripe avocados and tangy feta cheese, perfect for snacking or entertaining.

  • 1 cup crumbled feta cheese
  • 1/2 red onion, finely chopped
  • 1 cup cherry tomatoes, diced
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Prep the avocados: Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl. Lightly mash for texture.
  2. Add your feta: Crumble in the feta cheese and blend it into the avocado.
  3. Mix in the aromatics: Toss in the finely chopped red onion.
  4. Introduce the tomatoes & parsley: Add the diced cherry tomatoes and chopped parsley, folding gently.
  5. Dress it up: Drizzle with lemon juice and olive oil, then season with salt and pepper.
  6. Final touches: Mix until well combined but slightly chunky. Taste and adjust seasoning.
  7. Chill (optional): Allow to sit in the fridge for 30 minutes for flavors to meld.
