Crispy Avocado Hash Browns

A delightful breakfast combining crispy hash browns and creamy avocado, perfect for starting your day on a positive note.

  • 2 large potatoes, grated
  • 1 ripe avocado, sliced
  • 1 small onion, diced
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Optional toppings: chopped cilantro, lime juice, salsa

Instructions

  1. Prep your potatoes by peeling and grating them into a clean bowl. Allow them to sit for about 10 minutes to release excess moisture.
  2. Mix in the goodness by combining the grated potatoes, diced onion, salt, and pepper in a large mixing bowl.
  3. Heat up the ol’ skillet by warming the olive oil in a non-stick skillet over medium heat.
  4. Form your patties by shaping the mixture into flat patties about ½-inch thick.
  5. Get ‘em crispy by frying the patties in the skillet for about 4-5 minutes on each side until golden brown.
  6. Serve and savor by transferring the crispy hash browns to a plate, topping with avocado slices, and optionally adding cilantro, lime juice, or salsa.

Notes

For a different twist, try using sweet potatoes or add jalapeños for a spicy kick. Store leftovers in an airtight container in the fridge and reheat in the oven.
